Whenever I ask people the best place to eat top-notch sushi, people tell me: “Go to Sushi Jiro”.
Sushi Jiro. Have you heard of this place?
This place is written about in numerous blogs, numerous books (in Japanese), and has recently even become a movie called “Jiro, Dreams of Sushi”

The sushi restaurant is called “Sukiyabashi Jiro”. The owner, 82 years old, is Ono Jiro. His store has received a three star rating from the famed and prized Michelin Guide. What’s even more special is that his restaurant is by no means fancy. Located in the basement of an office building, this place even hard to get to – but when you do, and finally sit down for some sushi, you’ll understand why this place has indeed three stars.


“Jiro Nigiri” – a name for how he prepares his sushi - is just one of the many ways Ono has brought about his fame. It all began, he says, because he was left-handed. Way back when he started as a sushi chef, many regarded left-handed sushi chefs as awkward in their sushi handling. So he studied and studied; experimented and experimented until he found just the right balance for sushi making. Ono Jiro, keeping his back straight, slightly bends down when he puts the sushi on top of the rice. When he goes out for a walk, he always wears gloves – to keep his hands as soft and clean as possible.
All the care he takes in making one dish of sushi is the reason why his restaurant is always full of people. If you want to eat here, you’ll need to make a reservation at least two months in advance. And if you’re traveling without a Japanese companion, you’ll need to reserve through a concierge – quite a hassle if you ask me.
